Gluten-Free
1 pkg – Bob’s Red Mill Grain Free Flatbread mix
1/4 cup – Light Olive Oil, Coconut Oil, or Melted Butter
2 – Organic Eggs
1/4 cup – Water
1/2 cup – Olive Oil (set aside for flatbread coating)
1 TBSP – Gluten – Free All Purpose Flour
2 TBSP – Pizza Seasoning or Italian Seasoning
1/4 cup – Cheese
Preheat oven to 400 degrees. In a medium-sized bowl, mix the packaged mix with all the other ingredients except the 1/2 cup olive oil. Mix with a fork or wooden spoon. As soon the dough is mixed thoroughly place on a greased baking sheet or stone. Put a little gluten-free all-purpose baking flour on the top of the dough. This prevents it from sticking to your hands. Shape the dough in a square and press it until it is about 1/2 inch thick. Lightly dent the dough with your fingers. Next, put 1/4 cup of oil over the top of the dough evenly. Sprinkle the seasoning evenly over the dough and then sprinkle the cheese. Lightly press those ingredients into the dough so they will be in the top layer. Place the baking sheet into the preheated oven for 15 min or until golden. After it comes out, drizzle the remaining olive oil over the top. Tastes best freshly warm out of the oven. Enjoy!

Hi, it is so good! I just made it yesterday and was very happy with how it turned out! You can order the mix from Swanson when they have a sale for a much better price 🙂
