Gluten Free
5-6 servings
3 lb bag – red or golden potatoes
1/3 cup – olive oil
1/2 Tbsp – spike seasoning
1/2 cup – Colby Jack cheese

Preheat oven to 400 degrees. Wash and chop up potatoes into chunks. Set aside and get baking sheet ready by coating it with the olive oil. Lay the potatoes down on the sheet in a single layer. Sprinkle the spike seasoning evenly over the top of the potatoes. Wrap the parchment paper over the top of the baking sheet and put it into the oven. Bake for about 25 minutes and then turn all the potatoes. Put them back in covered with the parchment paper. After another 20 min, take out and lay the cheese evenly over the potatoes. Cover with parchment paper again and bake for another 10 to 15 min. If it looks like the potatoes are baking quicker, just reduce the baking time a little.
