Serving Size: 2
1 Cup – Cottage Cheese (lactose -free if you are lactose intolerant)
1/4 Cup – Diced Red Onion (the red onion tastes the best with this recipe)
1/2 Cup – Diced Ripe Tomato
1 cup – Diced and Peeled Cucumber ( I like to scoop the seeds out)
2 Tbsp – Chopped Cilantro
1/4 tsp – Sea Salt
Pepper to taste
Instructions:
- Mix all the ingredients in with the cottage cheese lightly.
- Do not over mix, just lightly mix with a fork.
Serving Suggestions:
I sometimes eat it as a meal, since I eat 6 small meals a day the size of my fist.
This makes a great snack or side dish.
