WHAT’S ON MY MIND?
Spring is in the air, and there is a feeling of excitement. We always do fun things in the spring, summer, and fall. I am so ready to get outside and garden. I can’t wait to go to the farmers’ markets and visit with the vendors there.
April is carrot season, and they are so nutritious. I’m excited to be planting them, and I want to share some fun recipes and information about carrots. I hope you will share yours, too!

I wanted to come up with a healthy recipe for carrot muffins that didn’t involve too much sugar. I had run across some amazing gluten-free carrot cake recipes, but the ones I liked were loaded with sugar. I created these myself, and they are fabulous!

I drink this every day! The fact that it’s a quick and easy way to get in my carrot nutrition is a big bonus. I also eat carrots, but this is how I’m sure I’m eating them on a daily basis.

WORDS OF ENCOURAGEMENT:
There are times when setbacks occur. Unfortunately, this last week has been a serious setback for me. I went in for a routine endoscopy & ended up with a cut in my throat. It was getting infected. Fortunately, I was able to nurse myself with herbal remedies, so I did not need to go on antibiotics. I have been working so hard to maintain a healthy gut. The last thing I wanted was to mess it up with the use of antibiotics. It was a painful, miserable week, and I will spare you all the details. The good news is I believe I am out of the woods and am slowly healing from the doctors mistake.
I was very miserable and actually upset that this happened to me unnecessarily. However, I decided to focus my mindset on getting better and healing. Every day, I believed I was getting better, and I pictured myself being healed up. Set backs come in many forms, but they are just setbacks. We can get through these crazy things in life and end up on the other side. Patience has been a part of this process, especially since I want to eat solid food so bad. This will come, but healing can take a little bit.
I just want to encourage everyone that no matter what the setback is, we can get through it. We can choose to be positive or negative about the situation. Believe me, I wanted to slip into the negative side, but I fought it. I do have a better attitude now, and we all have the ability to achieve this. The below verse came to my mind while I have been going through this ordeal.
Isaiah 40:31
But those who wait on the Lord shall renew their strength; They shall mount up with wings like eagles, They shall run and not be weary, They shall walk and not faint.
