1 – 8×8 dish
2 – large purple potatoes or 4 medium regular potatoes
4 – large peeled carrots
12 – brussels sprouts
1 – large onion
1/3 cup avocado oil
parchment paper

Pre -heat oven to 400 degrees
Once all the vegetables are washed, peel them. Cut them into bite-sized pieces. Then, put them all into the 8×8 baking dish. Drizzle avocado oil over the vegetable mixture. Mix the oil in thoroughly. Then sprinkle your favorite seasoning over the top of the vegetables. Mix that in thoroughly as well. Then tear off a piece of parchment long enough to wrap around the top of the dish. Place in oven and set the timer for 1 hour. When done, take it out and let it sit for a minute. This will prevent a steam burn when you lift off the parchment paper.
