1/4 – cup coconut oil
1/2 – cup monk fruit (Erythritol Free), stevia or organic coconut sugar
2 – eggs, beaten (room temperature)
1 1/2 – cup gluten-free all purpose flour mix
2 Tbsp – organic buckwheat flour
1 tsp. – guar gum
1/2 – tsp. sea salt
1 tsp. – baking powder
1 tsp. – baking soda
3 – very ripe bananas, mashed
1 cup – raisins
1/2 – cup unsweetened organic apple sauce
1/4 – cup unsweetened organic almond milk
1 tsp – vanilla
1 tsp. – cinnamon
Cream the oil sugar & vanilla. Add the eggs and beat until all are mixed together. Add the pre-made flour mix, buckwheat flour, salt, guar gum, baking powder, baking soda, cinnamon. Mix on medium high speed for about 4 min. Then add the mashed bananas, raisins, almond milk, applesauce and mix on medium speed for 1 min. Grease an 8×8 bahing dish, scrape the bowl and pour all the batter in the dish. Preheat oven and bake at 350 degrees for 35 to 45 min or until toothpick comes out clean. Enjoy warm!
