Gluten Free
Makes 1 serving
1 TBSP organic buckwheat flour
1/2 cup Bob’s Red Mill pancake waffle mix
1 organic egg
1/4 to 1/3 cup organic unsweetened almond milk
1/4 tsp cinnamon
Use a clear Pyrex 2 cup measuring cup. In the measuring cup, add buckwheat flour, then add pancake waffle mix. Add 1 egg and add 1/4 cup almond milk. Lastly, add the cinnamon and mix with a small whisk in the cup. Scrape the flour off the bottom to mix well. Add a little more almond milk if it seems too thick, but do not add too much. The batter should all measure at about the 1 cup measuring line, maybe just a bit over. Put coconut oil on the preheated Belgian waffle iron to prevent sticking. Pour the batter and take off when done. Spread some coconut oil over the top. You may top with any of your favorite fruits or berries. Enjoy!
